White teas and rare yellow teas are very delicate. They have subtle flavours and need slightly cooler water. Infusion time: 3-7 mins.

GREEN TEA 70°C

Green teas are full of health benefits and brewed at a lower temperature. Examples are Gyokuro and Sencha. Infusion time: 2 mins.

BlOOMING TEA 80°C

Blooming teas are beautiful as well as healthy. Flowers such as jasmine or rose unfurl in the hot water. Infusion time: 2-3 mins.

WHITE TEA 85°C

White tea is full of antioxidants. It’s minimally processed and made from young leaves. Infusion time: 3-5 mins.

OOLONG TEA 90°C

Partially fermented, these intriguing and distinctive teas have a range of flavours. For the connoisseur. Infusion time: 3-5 mins.

BLACK TEA 95°C

Black teas are fully fermented and oxidised. Popular examples are Assam, Earl Grey and English Breakfast Infusion time: 4-5 mins.

HERBAL TEA 100°C

Herbal teas (tisanes) are not technically teas! They’re created from herbs, spices or plants other than camellia sinensis. Rooibos tea is also prepared at this same temperature. Infusion time: 5-7 mins.
